After watching Moana 20-30 times in the last week (because my 2yo is in the stage where she needs to watch movies 3 times in a row every day), I think that Maui would benefit from having a standalone movie.

The Rock as Maui is without a doubt my favorite aspect of the film. He brought so much charisma and humor to Maui that I just want to see more of him.I think a prequel of sorts, where it shows how he got his first few tattoos (including the little mini version of him), and perhaps his first encounters with characters like Tamatoa and Te Fiti, could be a very enjoyable movie to watch.Or it could end up coming across feeling incredibly forced and unnecessary.
